Ingredients:

Directions:

  1. Heat oil over medium heat in a nonstick skillet large enough to hold all of the potatoes in a single layer.
  2. Add potatoes and yellow onion.
  3. Season with salt and pepper.
  4. Cook until crispy on all sides-about 8-10 minutes,stirring frequently.
  5. Reduce heat and cook until tender when pierced with a fork,5-10 minutes.
  6. Remove from heat.
  7. Put the potatoes in a mixing bowl and add barbecue sauce,green onion and oregano.
  8. Srir to coat.
  9. Return skillet to he stove,add remaining 2 teaspoons of oil and heat over medium heat.
  10. Crack the eggs into the skillet and season with salt and pepper.
  11. Cook over high heat for 2 minutes or until just whites are cooked.
  12. Remove from heat.
  13. Divide the potatoes between the two tortillas and place one egg on top,sunny side up and wrap.
