Really good breakfast all wrapped up neatly! The egg yolk should bust on the first bite and coat the inside with it's yumminess. Ingredients:
1 tablespoon vegetable oil |
2 teaspoons vegetable oil |
2 cups potatoes, diced into 1/2 inch pieces |
1/2 cup yellow onion, thinly sliced |
1/4 teaspoon kosher salt |
1/4 teaspoon pepper |
1/2 cup barbecue sauce |
1/4 cup green onion, sliced thin and green part only |
1 teaspoon oregano, dried |
2 eggs |
2 (10 inch) tortillas |
Directions:
1. Heat oil over medium heat in a nonstick skillet large enough to hold all of the potatoes in a single layer. 2. Add potatoes and yellow onion. 3. Season with salt and pepper. 4. Cook until crispy on all sides-about 8-10 minutes,stirring frequently. 5. Reduce heat and cook until tender when pierced with a fork,5-10 minutes. 6. Remove from heat. 7. Put the potatoes in a mixing bowl and add barbecue sauce,green onion and oregano. 8. Srir to coat. 9. Return skillet to he stove,add remaining 2 teaspoons of oil and heat over medium heat. 10. Crack the eggs into the skillet and season with salt and pepper. 11. Cook over high heat for 2 minutes or until just whites are cooked. 12. Remove from heat. 13. Divide the potatoes between the two tortillas and place one egg on top,sunny side up and wrap. |
