Banana Brittle Sundaes

Ingredients:

  • 2/3 cup packed brown sugar
  • 1/4 cup butter
  • 2 tbsp lemon juice
  • 2 tbsp dark rum (optional or can sub 1/8 tsp rum extract)
  • 2 tbsp water

Directions:

  1. In blender or food processor, coarsely chop peanut brittle. Cut bananas in half crosswise, then lengthwise.
  2. In large skillet, combine sugar, butter, lemon juice, rum and water; bring to boil over medium heat. Add bananas, gently turning to coat.
  3. Reduce heat and simmer, spooning sauce over bananas, for 2 to 3 minutes or until heated through but still firm.
  4. Spoon ice cream into chilled bowls; top with banana mixture. Sprinkle with peanut brittle.
