Low, low on the difficulty level to prepare, but big, big on taste. From cdkitchens. Ingredients:
4 ounces peanut brittle |
4 firm bananas |
2/3 cup packed brown sugar |
1/4 cup butter |
2 tablespoons lemon juice |
2 tablespoons dark rum (optional or can sub 1/8 tsp rum extract) |
2 tablespoons water |
4 cups vanilla ice cream |
Directions:
1. In blender or food processor, coarsely chop peanut brittle. Cut bananas in half crosswise, then lengthwise. 2. In large skillet, combine sugar, butter, lemon juice, rum and water; bring to boil over medium heat. Add bananas, gently turning to coat. 3. Reduce heat and simmer, spooning sauce over bananas, for 2 to 3 minutes or until heated through but still firm. 4. Spoon ice cream into chilled bowls; top with banana mixture. Sprinkle with peanut brittle. |
