Banana Bread ( With Cauliflower)

Ingredients:

  • nonstick cooking spray
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup vegetable oil
  • 2 large egg whites
  • 1 1/2 cups banana puree
  • 1/2 cup cauliflower

Directions:

  1. Preheat the oven to 350°F Coat a 9 x 5 inch loaf pan with cooking spray.
  2. In a bowl mix the flours, baking soad, baking powder, salt, and cinnamon then set aside.
  3. In another large mixing bowl, combine sugar and oil until well combined. Mix in the egg whites, bananas and cauliflower purees, and the vanilla.
  4. Add the flower mix to the wet mix.
  5. Pour the batter into the loaf pan and bake for 55 - 60minutes, or until it passes the toothpick test.
  6. Let cool on rack for 5 minutes and then turn the bread out of the pan to cool further before serving.
