Ingredients:

  • use 1/2 lb. pizza dough. spread this on a parchment lined cookie sheet. dough should not be too thin. should be about 1 inch thick. make indentations with your finger, all over the top of the dough. pour 3 tbsp. of olive oil evenly all over top of dough. sprinkle evenly with 1 1/2 tsp. salt, 1 tsp. garlic powder and 1/4 cup grated parmesan cheese. bake at 415 degrees for about 20 minutes or til browned. remove from oven and let cool. then cut into 4 sandwiches. then slice each sandwich horizontally and set aside.

  • 2 tbsp. olive oil
  • 16oz. mozzerella- sliced into 1/4 inch thick horizontal slabs
  • salt and pepper to taste
  • in a large skillet , saute onions in 1 tbsp. olive oil with salt

Directions:

  1. Assemble
  2. Place 1 slice of mozzerella on each sandwich, then add a layer of spinach leaves, 1/4 of the mushrooms, 1/4 of the onions and 1/4 of the dressing on top. Close sandwich. Do the same for the remaining sandwiches. Then heat the skillet on medium. Place 1 sandwich in skillet, pressing down on it slightly. Cook til bottom is browned. Then turn over and do the same again. Do this for all sandwiches. Serve warm.
