I always wanted to make Paninis but I just never did...until now! I'm glad I tried it...it was delicious! Ingredients:
to make bread (foccacia)... |
use 1/2 lb. pizza dough. spread this on a parchment lined cookie sheet. dough should not be too thin. should be about 1 inch thick. make indentations with your finger, all over the top of the dough. pour 3 tbls. of olive oil evenly all over top of dough. sprinkle evenly with 1 1/2 tsp. salt, 1 tsp. garlic powder and 1/4 cup grated parmesan cheese. bake at 415 degrees for about 20 minutes or til browned. remove from oven and let cool. then cut into 4 sandwiches. then slice each sandwich horizontally and set aside. |

2 tbls. olive oil |
8oz. portabella mushrooms- sliced |
1 large red onion- sliced into rings |
1 small bunch of fresh spinach leaves- washed and dried |
16oz. mozzerella- sliced into 1/4 inch thick horizontal slabs |
1/2 cup balsamic vinegar dressing |
salt and pepper to taste |
in a large skillet, saute onions in 1 tbls. olive oil with salt and pepper. remove from skillet and set aside. then slightly saute mushrooms the same way. remove and set aside. |
Directions:
1. Assemble 2. Place 1 slice of mozzerella on each sandwich, then add a layer of spinach leaves, 1/4 of the mushrooms, 1/4 of the onions and 1/4 of the dressing on top. Close sandwich. Do the same for the remaining sandwiches. Then heat the skillet on medium. Place 1 sandwich in skillet, pressing down on it slightly. Cook til bottom is browned. Then turn over and do the same again. Do this for all sandwiches. Serve warm. |
