Ingredients:

Directions:

  1. Heat olive oil in a large skillet or oven-safe frying pan on medium-high.
  2. Add onion, let it become translucent.
  3. Add turkey bacon, let it become browned and fragrant.
  4. Add zucchini, tomato, and garlic; cook until veggies become soft.
  5. In a separate bowl, combine eggs, milk, parmesan, 1/4 cup of the cheddar, and dashes of salt & pepper.
  6. Pour egg mixture into the pan; mix right away. Let it cook for 4-5 minutes, or until the bottom and top begin to set.
  7. Sprinkle the rest of the cheddar over the entire top, and broil for 4-5 minutes, or until golden. Enjoy!
