Ingredients:

Directions:

  1. Soak rice in lemon juice and 1 cup hot water 5 minutes; drain.
  2. Sauté rice in hot oil in a large saucepan over medium-high heat 10 minutes or until golden. Stir in tomato, bell pepper, and garlic.
  3. Stir together chicken base and remaining ingredients; stir into rice mixture. Cover, reduce heat, and simmer 15 minutes or until liquid evaporates (do not uncover while rice is cooking).
  4. Prep: 10 min., Soak: 5 min., Cook: 25 min.
  5. *Chicken base, a highly concentrated paste made from chicken stock, may be found with broth and bouillon in supermarkets.
