3/4 cup long-grain rice |
1 teaspoon lemon juice |
1 cup hot water |
2 tablespoons olive oil |
2 tomatoes, chopped |
1 medium-size green bell pepper, chopped |
1 large garlic clove, minced |
1 tablespoon chicken base |
1 cup hot water |
1 teaspoon ground cumin |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Soak rice in lemon juice and 1 cup hot water 5 minutes; drain. 2. Sauté rice in hot oil in a large saucepan over medium-high heat 10 minutes or until golden. Stir in tomato, bell pepper, and garlic. 3. Stir together chicken base and remaining ingredients; stir into rice mixture. Cover, reduce heat, and simmer 15 minutes or until liquid evaporates (do not uncover while rice is cooking). 4. Prep: 10 min., Soak: 5 min., Cook: 25 min. 5. *Chicken base, a highly concentrated paste made from chicken stock, may be found with broth and bouillon in supermarkets. |
