The Quickest Huevos Rancheros in the World...for One!

Ingredients:

Directions:

  1. Cook eggs in mircowave as specified in Scrambled Eggs in the Microwave (Great for Work!) (or on stove top, if you prefer); set aside when cooked.
  2. Place 2 corn tortillas side by side on a dinner-sized plate.
  3. Spread refried beans, straight from the can, evenly over the tortillas.
  4. Microwave for 30 seconds.
  5. Top with eggs and pour spicy tomato sauce over top.
  6. Sprinkle with chile powder and then cheese.
  7. Microwave for 1 minute.
  8. Top with onions, cilantro, and olives if desired.
  9. Serve!
