  1. Melt butter in a skillet; add tasso, and saute until browned. Whisk in flour, and cook, whisking constantly, until lightly browned. Whisk in coffee and broth; simmer, whisking occasionally, 20 minutes. Stir in thyme, salt, and pepper.
