Ingredients:

  • 1 can regular or hot rotel (depends upon the spice factor you'd like)
  • 1/8 to 1/4 cup fresh cilantro
  • sometimes i fry up about 1/2 lb of ground beef seasoned with a little chili powder and throw it in, also.

Directions:

  1. Take out large saucepan
  2. Open and empty both Rotel cans into saucepan
  3. Turn on burner to medium-low
  4. Cut the cheese (ha) into small squares and add to saucepan
  5. Stir frequently
  6. Just make sure you don't have the burner up too much to burn or scald the cheese
  7. Presto...put tortilla chips into a big bowl and gain about 5 pounds!!
