Super Simple Golden Crispy Fish

Ingredients:

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1/4 cup flour
  • 1/2 tsp dried thyme
  • 4 thin sole fillets or 4 flounder fillets

Directions:

  1. In a large, deep skillet, heat the butter and oil over medium heat.
  2. Meanwhile, combine the dry ingredients in a large resealable plastic bag.
  3. Shake well.
  4. Add the fish to the bag, one at a time, and shake to coat.
  5. Cook the fish in the skillet for 4 minutes per side, until golden brown.
  6. The fish should flake easily with a fork.
  7. If you like a lemony taste, squeeze the lemon juice over the cooked fish.
  8. You can also garnish each serving with lemon wedges and let diners squeeze their own juice to taste.
