Ingredients:

Directions:

  1. Cook zucchini in boiling salted water 10 minutes.
  2. Cut in halves and scoop out centers.
  3. Saute Onion, Garlic and tomato for 2-3 minutes.
  4. Mix pulp with remaining ingredients.
  5. Fill zucchini.
  6. Bake in 350 F oven for 15 minutes.
  7. Top with Parmesan Cheese last 5 minutes until slightly browned.
  8. Serve.
