  1. Crack, peel and DEFINATLY make sure all the shell is off. Slice in half lenghthwise and pop out yolks into a small bowl.
  2. Using a mixer , mix well!, you want a very creamy consistancy. If more seasoning is needed, go for it. It's up to your taste buds. Remember, you can always add, you can't take out.
  3. Using a tespoon or pastry bag place filling into whites, garnish and voila!
