Spicy Orange Bran Muffins

Ingredients:

  • 1 1/2 cups natural bran
  • 1 3/4 cups buttermilk
  • 1 1/4 cups whole wheat flour
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 cup raisins
  • 2 tbsp orange zest
  • 1 egg
  • 1/4 cup brown sugar, loosely packed
  • 1/4 cup canola oil
  • 2 tbsp molasses
  • 2 tbsp honey

Directions:

  1. Combine bran and buttermilk, let stand while assembling other ingredients.
  2. In bowl, combine remaining dry ingredients.
  3. In another bowl, combine egg, brown sugar, honey, molasses and oil.
  4. Mix well.
  5. Add bran mixture.
  6. Add dry ingredients.
  7. Bake in sprayed muffin tin in 375 degree oven for 20 minutes.
  8. Best served warm.
