Ingredients:

  • 1/4 cup shortening
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 2 eggs
  • 1 cup milk
  • 1 1/2 cups wheat bran
  • 1 cup flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1/2 cup raisins (optional)

Directions:

  1. Preheat oven to 400*F. Line 12 muffin tins with paper liners.
  2. Cream together shortening and sugar.
  3. Add molasses and eggs, beating well.
  4. Add milk and bran.
  5. Mix together flour, baking powder, baking soda and salt. Add to the wet mixture.
  6. Stir in raisins, if using.
  7. Divide among the muffin tins and bake for 18 - 20 minutes.
