Ingredients:

Directions:

  1. Saute the minced onion in olive oil
  2. When onions are soft add cumin, chili, salt and pepper
  3. Add chunky salsa and allow to cook for a few minutes
  4. Add jalapeno and tomato, again let it cook for a few mins.
  5. Add corn, black beans, chicken, and chicken broth
  6. Bring to boil then reduce to low
  7. On the side cook up the bag of rice then add it to the soup just before eating
  8. Frost with sour cream
