This soup is delicious and gets my picky people to eat beans without any complaint. It's a great way to use up any extra salsa Ingredients:
shredded roasted chicken |
1 can black beans |
1 can corn |
32 oz chicken broth |
1 small onion |
1 tbsp cumin |
2 tsp chili powder |
canned jalapeno to taste |
boil in bag rice |
chunky salsa |
1 15oz can diced tomatos |
sour cream |
Directions:
1. saute the minced onion in olive oil 2. when onions are soft add cumin, chili, salt and pepper 3. add chunky salsa and allow to cook for a few minutes 4. add jalapeno and tomato, again let it cook for a few mins. 5. add corn, black beans, chicken, and chicken broth 6. bring to boil then reduce to low 7. on the side cook up the bag of rice then add it to the soup just before eating 8. frost with sour cream |
