Roasted Herbed Potatoes

Ingredients:

  • 1 small onion
  • 2 cloves garlic
  • 1 medium zucchini
  • 1 tsp italian seasonings
  • 2 tsp olive oil

Directions:

  1. Heat oven to 400F
  2. Cube potatoes and zucchini into 1in cubes.
  3. Dice onion and garlic.
  4. Toss potatoes, garlic and onion.
  5. Cook for 30 minutes, tossing every 10-15 minutes.
  6. Add zucchini and cook for another 20-30 minutes till potatoes are fork tender, tossing every 10-15 minutes.
