Ingredients:

Directions:

  1. Lightly toast the almonds in a dry pan and set aside.
  2. Heat up stock and add olive oil.
  3. Place onion and couscous in a medium mixing bowl and add heated stock.
  4. Stir gently, then cover bowl tightly with plastic wrap.
  5. Leave for 5 minutes.
  6. Once couscous has absorbed the stock, lightly fluff with a fork.
  7. Sprinkle with almonds and season to taste with salt and pepper.
