Potato Salad With Buttermilk Dressing

Ingredients:

Directions:

  1. Whisk first 6 ingredients in medium bowl until blended then season with salt and pepper.
  2. Set dressing aside.
  3. Cook potatoes in large pot of boiling salted water until tender about 5 minutes.
  4. Transfer potatoes to colander and rinse under cold water to cool.
  5. Drain then transfer to large bowl.
  6. Return water in pot to boil.
  7. Cook carrots about 2 minutes.
  8. Add celery and cook 1 minute longer.
  9. Drain then rinse carrots and celery under cold water to cool.
  10. Drain well and mix into potatoes.
  11. Add enough dressing to vegetables to coat.
  12. Season with salt and pepper.
  13. Arrange arugula around edge of platter then mound potato salad in center.
  14. Sprinkle with chives.
