Parsnips in Melting Mustard Sauce

Ingredients:

Directions:

  1. Preheat the oven to 375'F. Cook the parsnips in boiling salted water until just tender, about 5-8 minutes.
  2. Drain. Cut each parsnip lengthwise into 1/4 -thick slices.
  3. Place them in a buttered shallow baking dish in a single layer.
  4. Bake 10 minutes. Melt the butter in a small saucepan over low heat.
  5. Slowly add the mustard, honey and bourbon. Cook 5 minutes.
  6. Brush this sauce evenly over the baked parsnips.
  7. Sprinkle with salt and pepper to taste.
  8. Place the parsnips under a preheated broiler to lightly brown, about 1 minute. Sprinkle with parsley and serve.
