Ingredients:

Directions:

  1. Put the olives in a food processor and chop.
  2. Squeeze out as much moisture as possible.
  3. Set aside.
  4. Heat 1/4 c olive oil and saute onions and garlic until golden.
  5. Add to olives.
  6. Mix flour, baking powder, baking soda, salt, cumin in a bowl.
  7. Add beaten eggs.
  8. Add olive onion mixture.
  9. Add water if batter is too thick.
  10. Heat 1/4 c olive oil in skillet, add batter by ladlefuls, and cook 4 at a time for 3-4 minutes per side.
  11. Remove, keep warm, and cook additional latkes.
  12. Garnish with sour cream.
