Ingredients:

Directions:

  1. In large bowl, combine oats and yogurt, and let stand 1 hour.
  2. Pre-heat oven to 400 degrees F.
  3. Add eggs whites, applesauce, sugar, and honey to oat mixture, stirring until just combined.
  4. Into another bowl, sift together flour, salt, baking powder, and baking soda, then add to oat mixture, stirring until just combined.
  5. Fold in raisins and walnuts.
  6. Divide batter evenly among 12-muffin muffin tin.
  7. Bake muffins in center of oven until golden, approx. 20 minutes.
