My Mothers Potato Salad

Ingredients:

Directions:

  1. Cut potatoes into large chunks
  2. Boil in salted water till tender
  3. Drain
  4. Let cool 15 min
  5. Mash slightly (I use a knife )
  6. Add eggs, scallions and celery
  7. In small bowl mix 3/4 cup miracle whip, 1/2 cup mayo 1/4 tsp salt, 1/4 tsp pepper and vinegar
  8. Add to potatoe mixture
  9. Chill for 4 to 6 hours
  10. In small bowl mix 1/2 cup miracle whip and 1/2 cup sour cream
  11. Mix with potatoes salad
  12. Sprinkle with paprika
