This salad brings back memories of fishing with ing home to a bbq with mom's potatoe salad. major smiles, and full tummy's. Ingredients:
6 large yukon gold potatoes (skins on) |
4 hard boiled eggs chopped |
4 large scallions chopped fine |
1 stalk of celery, minced |
3/4 cup of miracle whip |
1/2 cup of mayonaise |
1 tbs white wine vingegar |
salt |
pepper |
paprika |
1/2 cup miracle whip |
1/2 cup sour cream |
Directions:
1. cut potatoes into large chunks 2. boil in salted water till tender 3. drain 4. let cool 15 min 5. mash slightly (I use a knife ) 6. add eggs, scallions and celery 7. in small bowl mix 3/4 cup miracle whip, 1/2 cup mayo 1/4 tsp salt, 1/4 tsp pepper and vinegar 8. add to potatoe mixture 9. chill for 4 to 6 hours 10. in small bowl mix 1/2 cup miracle whip and 1/2 cup sour cream 11. mix with potatoes salad 12. sprinkle with paprika |
