Ingredients:

  • 1 tbsp olive oil
  • 3 cups water
  • 1/4 tsp thyme
  • 1 tbsp cornstarch
  • 1/4 cup water, cold
  • 1/4 tsp pepper
  • 1/4 tsp salt

Directions:

  1. Aute the onion in the olive oil for a minute
  2. Add the mushrooms and saute over high heat for a few minutes, until the onions and mushrooms begin to brown
  3. Add all the other ingredients except the cornstarch and cold water
  4. Bring to a boil, reduce to a slow simmer, cover and cook for 20 minutes.
  5. Combine the cornstarch and cold water
  6. Stir into the soup and cook until thickened
