Low Country Barbecue Sauce

Ingredients:

  • 1/4 cup butter or margarine
  • 2 cups chopped tomatoes , processed through food mill
  • 1/4 cup vinegar
  • 1 tbsp sugar
  • 1 tbsp paprika
  • 1 tbsp pepper
  • 2 tsp salt
  • 1/4 tsp hot sauce
  • 1 clove garlic
  • 1/2 pod red pepper

Directions:

  1. Sauté onion in butter in a medium saucepan until tender. Stir in remaining ingredients; bring to a boil . Reduce heat; simmer, uncovered, 15 minutes. Remove and discard garlic and red pepper pod. Serve over sliced pork.
