Ingredients:

  1. Cut chicken into thin strips. Season with salt and pepper and 2 tbsp soy sauce and let sit for 10 minutes.
  2. Take 1/2 the oil, cook chopped chicken in a hot wok for approximately 4 minutes or until it has turned white. Empty chicken onto a hot plate, and set wok back onto heat and add the rest of the oil. Add ginger and garlic and cook about 1 minute until roasted and add the peppers, pea pods and red onion. Let cook for about 3 minutes or until it begins to soften. Then add the bean sprouts and green onion and allow to cook for about 2 minutes. Add a little bit of soy sauce in order to scrap the bottom of the wok, then cover wok with lid and allow to cook on very low heat for another 2-3 minutes. Serve with brown rice.
