Ingredients:

Directions:

  1. Butter a cookie sheet and set aside.
  2. In a heavy saucepan, combine the milk, butter, salt, nutmeg,and pepper and bring to a boil over moderate heat.
  3. Slowly add the semolina , stirring constantly.
  4. Reduce the heat to low and cook until very thick and a spoon will stand up in it unsupported in the center of the pan.
  5. Remove from the heat add the eggs and parmesan cheese and mix well.
  6. Spread on a cookie sheet in a rectangle 1/2 inch thick.
  7. Refrigerate until firm.
  8. Cut into rounds about 1-1/2 inches in diameter( or cut into squares or triangles)if you prefer...........
  9. Arrange in a greased casserole or baking dish, slightly over lapping.
  10. Drizzle with the melted butter and sprinkle with the parmesan cheese . bake in a preheated oven 350 degrees f. ...... for 20 minutes
  11. Serve hot
  12. Makes 3-4 servings...............
