This nice italian -style dumplings made with semolina or farina is very tasty , baked with love.........enjoy................. courtesy of the international cookbook Ingredients:
2- cups milk |
1 - tablespoon butter |
1/2 -teaspoon salt |
a pinch of freshly grated nutmeg |
ground white pepper....to taste |
1/2 - cup semolina ( or farina) |
2- eggs , beaten |
1/2 - cup grated fresh parmesan cheese |
for garnish.......... |
2 tablespoons melted butter |
1- tablespoon of grated parmesan cheese |
Directions:
1. Butter a cookie sheet and set aside. 2. in a heavy saucepan, combine the milk, butter, salt, nutmeg,and pepper and bring to a boil over moderate heat. 3. slowly add the semolina , stirring constantly. 4. reduce the heat to low and cook until very thick and a spoon will stand up in it unsupported in the center of the pan. 5. remove from the heat add the eggs and parmesan cheese and mix well. 6. spread on a cookie sheet in a rectangle 1/2 inch thick. 7. refrigerate until firm. 8. cut into rounds about 1-1/2 inches in diameter( or cut into squares or triangles)if you prefer........... 9. arrange in a greased casserole or baking dish, slightly over lapping. 10. drizzle with the melted butter and sprinkle with the parmesan cheese . bake in a preheated oven 350 degrees f. ...... for 20 minutes 11. serve hot 12. makes 3-4 servings............... |
