Ingredients:

Directions:

  1. Coat 12 muffin cups with no-stick spray.
  2. Place the onions in a small bowl.
  3. Microwave on high for 1 minute.
  4. In a medium bowl, mix the buttermilk, egg, honey and oil.
  5. In a large bowl, mix the flour, cornmeal, baking soda, cumin, pepper, coriander, oregano and baking powder.
  6. Stir in the feta and onions.
  7. Pour the buttermilk mixture over the flour mixture.
  8. Mix with a rubber spatula until the dry ingredients are moistened.
  9. Spoon the batter into the prepared muffin cups, filling them about 3/4 full.
  10. Bake at 450 degrees for 15 minutes.
