Curried Okra With Tomato

Ingredients:

Directions:

  1. If fresh okra is used, trim off tough stems.
  2. If frozen okra is used, defrost and drain.
  3. Put the tomatoes in a saucepan and bring to the boil.
  4. Cook, stirring often to prevent sticking, until the tomatoes are reduced to about two cups.
  5. Heat the oil in a saucepan over medium high heat and add onions and garlic.
  6. Cook, stirring, until the mixture is softened.
  7. Sprinkle with curry powder and ground coriander and cook briefly.
  8. Stir in the tomatoes and cook about five minutes; reduce heat if mixture is sticking.
  9. Stir in chilies and fresh coriander.
  10. Add the okra, chicken broth and salt and pepper to taste.
  11. Bring to a boil, reduce heat and simmer 15 minutes or until the okra is tender.
