Curried Apple Soup

Ingredients:

Directions:

  1. Melt butter in a large pan over medium heat.
  2. Add onions and saute gently until done, but not browned.
  3. Stir in the curry powder and cook for one more minute.
  4. Pour in the chicken stock and bring to a boil.
  5. Add the apples and apricots and return to a boil then lower the heat and simmer for 20 minutes.
  6. Remove the heat and let cool.
  7. Place in a blender or processor and blend until smooth and creamy.
  8. Return to the pan and reheat.
  9. Add the cream and season as necessary.
  10. Serve with garnishment of choice.
