Crispy Cheesy Brown Rice Patties

Ingredients:

Directions:

  1. Boil veggie broth and add rice.
  2. Cover and reduce heat to a simmer.
  3. Let cook 45 minutes or until broth is absorbed.
  4. Once rice is done add feta, parmesan, pepperjack, cheddar, and garlic powder.
  5. Let rice mixture cool.
  6. Heat oil over medium-high heat.
  7. Once cool, shape into patties.
  8. Dip patties into egg, then breadcrumbs.
  9. Fry on each side until golden brown.
  10. I like to serve these with sour cream.
  11. Enjoy!
