Crispy Cheesy Brown Rice Patties |

I made these using some of the leftover rice mixture from my stuffed peppers recipe and I really loved how they turned out. These can be an easy appetizer, a side, or a nice light main dish paired with a salad. Ingredients:
2 1/2 cups vegetable broth |
1 cup brown rice |
1/4 cup feta cheese |
1/4 cup parmesan |
1/4 cup pepperjack cheese |
1/4 cup cheddar cheese |
1 tsp garlic powder |
1-2 eggs, beaten |
1 cup bread crumbs |
oil for frying |
Directions:
1. Boil veggie broth and add rice. 2. Cover and reduce heat to a simmer. 3. Let cook 45 minutes or until broth is absorbed. 4. Once rice is done add feta, parmesan, pepperjack, cheddar, and garlic powder. 5. Let rice mixture cool. 6. Heat oil over medium-high heat. 7. Once cool, shape into patties. 8. Dip patties into egg, then breadcrumbs. 9. Fry on each side until golden brown. 10. I like to serve these with sour cream. 11. Enjoy! |
