Ingredients:

Directions:

  1. Cook barley per instructions on bag
  2. Let cool for about 10 minutes
  3. Add olive oil and juice of lemon to barley
  4. Stir together
  5. Add the tomatoes, onions, mint, cucumbers and parsley
  6. Stir together until mixed thoroughly.
  7. Let stand in refrigerator for about one hour until cold.
  8. Serve.
