My husband and I love barley so we decided to try a cold barley salad. It is our own recipe. I hope you enjoy it too. Ingredients:
1 bag of barley |
1 lemon |
2 tbsp olive oil |
1/2 cup diced cucumber |
1/2 cup diced tomatoes |
1/4 cup chopped onions |
1/4 cup chopped parsley |
1/4 cup chopped mint |
Directions:
1. Cook barley per instructions on bag 2. Let cool for about 10 minutes 3. Add olive oil and juice of lemon to barley 4. Stir together 5. Add the tomatoes, onions, mint, cucumbers and parsley 6. Stir together until mixed thoroughly. 7. Let stand in refrigerator for about one hour until cold. 8. Serve. |
