Chocolate Toffee Cookies

Ingredients:

  • 1 cup plus 2 tbsp. sugar
  • 1 egg
  • 1 tbsp. dark rum
  • 1 cup flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 cups toffee bar, such as heath or skors

Directions:

  1. Preheat oven to 350
  2. Beat butter and sugar until fluffy
  3. Add egg, rum, and vanilla until well blended
  4. Sift flour, cocoa, baking soda, and salt into mixing bowl
  5. Stir dry ingredients into butter mixture
  6. Mix in toffee and almonds
  7. Drop one tbls. of batter onto ungreased baking sheet, about 2 inches apart
  8. Bake 10-12 minutes
  9. Should puff slightly and crack on top
  10. Let cool on sheet for a minute, then transfer to rack to cool
