  1. Saute onions, garlic in olive oil.
  2. Add sliced zucchini, eggplant, mushrooms. Saute until soft.
  3. Add diced sweet potato, tomatoes, diced jalapeno, herbs & spices.
  4. Bring to boil, simmer on low 45 minutes.
