Vegetable stew Ingredients:
2 chinese eggplant |
2 zucchini |
2 cloves garlic |
1 medium onion |
28 ounce tomatoes |
1/2 lb mushrooms |
2 tbsp olive oil |
1/4 cup parsley |
1 sweet potato |
2 tsp dry oregano |
1/2 tsp salt |
1/2 tsp black pepper |
1/2 jalapeno pepper |
Directions:
1. Saute onions, garlic in olive oil. 2. Add sliced zucchini, eggplant, mushrooms. Saute until soft. 3. Add diced sweet potato, tomatoes, diced jalapeno, herbs & spices. 4. Bring to boil, simmer on low 45 minutes. |
