Banana Walnut Pancakes

Ingredients:

  • 1/3 cup cornmeal
  • 1 1/2 cups milk
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup walnuts
  • 2 eggs

Directions:

  1. Mix together the flour, cornmeal, sugar, baking powder, salt, and cinnamon
  2. Whisk together the milk, vanilla extract and egg yolks
  3. Stir the wet mixture into the dry and let sit for 5 minutes to thicken
  4. Beat the egg whites until peaks form
  5. Stir the banana and walnuts into the batter
  6. Fold the egg whites into the batter
  7. In a skillet or a flat grill pan pour 1/4 cup of batter and cook about a minute on each side
