This is my FAVORITE new pancake recipe. It is wonderful for breakfast, lunch, or dinner. I like to top the pancakes with maple syrup and additional sliced bananas and chopped walnuts Ingredients:
1.5 cups whole wheat flour |
1/3 cup cornmeal |
1 1/2 cups milk |
1 tbsp sugar |
2 tsp baking powder |
1 tsp salt |
1 tsp vanilla extract |
1 tsp cinnamon |
1 banana mashed or diced |
1/4 cup walnuts |
2 eggs |
Directions:
1. Mix together the flour, cornmeal, sugar, baking powder, salt, and cinnamon 2. Whisk together the milk, vanilla extract and egg yolks 3. Stir the wet mixture into the dry and let sit for 5 minutes to thicken 4. Beat the egg whites until peaks form 5. Stir the banana and walnuts into the batter 6. Fold the egg whites into the batter 7. In a skillet or a flat grill pan pour 1/4 cup of batter and cook about a minute on each side |
