Ingredients:

Directions:

  1. Preheat oven to 220 degrees, fan oven 200.
  2. Place the potatoes on a baking tray, drizzle over the olive oil and sprinkle the salt, then use your hands to rub it in all over the skins,
  3. Bake for about 40 mins or until tender.
  4. Whilst the potatoes cook, mix the creme fraiche, cheese and chives together with salt and pepper to taste. Chill until required.
  5. Remove potatoes from the oven, cut a cross in the top of each and fluff up the flesh.
  6. Place potatoes back on baking tray and spoon a little filling into each.
  7. Return to the oven for 5 minutes before serving,
