Ingredients:

Directions:

  1. Preheat oven to 350
  2. Put most of the olive oil, all the shallots and potatoes and half the tomato in a baking dish
  3. Lay cod fillet on top
  4. Drizzle with remaining olive oil and lemon juice
  5. Cover with remaining tomatoes.
  6. Season with salt & pepper
  7. Bake for 20 minutes
