baked cod with tomatoes & potatoes Ingredients:
1 lb cod |
1/4 c shallots |
2 medium potatoes, thinly sliced |
2 medium tomatoes, sliced |
1/4 cup extra virgin olive oil |
1 pinch salt |
1 pinch pepper |
1 tbsp lemon juice |
Directions:
1. preheat oven to 350 2. put most of the olive oil, all the shallots and potatoes and half the tomato in a baking dish 3. lay cod fillet on top 4. drizzle with remaining olive oil and lemon juice 5. cover with remaining tomatoes. 6. season with salt & pepper 7. bake for 20 minutes |
