  1. 1. After sorting the beans for rocks, quick soak the beans by first placing them in a large pot and covering with 4-6 cups of water. With the stove on high heat let them come to a rolling boil for 2 min, remove from the heat and cover for one hour.
  2. 2. Drain the beans in a colander and set aside.
  3. 3. Preheat the oven to 350° degrees
  4. 4. Heat a dutch oven over medium heat. Add the bacon and cook till golden, not burnt. Add the onions and garlic and cook till tender. Add 4 cups of water, molasses, ketchup, mustard, and worcestershire sauce. Stir. Change heat to high and let the liquid come to a boil. Add the beans and let it come to a boil again. Cover the pot and transfer to the oven.
  5. 5. After the beans have been in the oven for 10 min, lower heat to 300° degrees. After an hour check the beans, they may need a little water to keep them barely submerged. Check the beans again after another hour to see if cooked through. The beans are ready when they are tender, but still retain their shape.
  6. 6. When the beans are done, remove from the oven, (carefully!!!), add the vinegar, and season to taste with salt and pepper.
