Zucchini Supper Casserole

Ingredients:

Directions:

  1. Place shredded zucchini in a colander over a plate; sprinkle with salt and toss.
  2. Let stand for 15 minutes.
  3. Rinse and drain well.
  4. In a bowl, combine the zucchini, egg substitute, bread crumbs,
  5. Flour and Italian seasoning.
  6. Spread in an 11 x 7 baking dish coated with nonstick cooking spray.
  7. Bake, uncovered, 350 F for 25 minutes.
  8. In a nonstick skillet, saute' mushrooms and garlic in oil.
  9. Spread half of the pizza sauce over zucchini mixture.
  10. Sprinkle with the mushrooms, green pepper, olives and half of the cheese.
  11. Top with remaining pizza sauce and cheese.
  12. Bake 15 minutes longer or until hot and bubbly.
  13. Serves 6
